Tortillas are one of the staples of Mexican cuisine, served up fried as tacos, rolled into soft burritos or layered as enchiladas.The history of tortillas dates back to 10,000 BC. Later, it was popularized when a peasant prepared this flat corn bread to the Mayan king.Missionaries later spread the recipe for tortillas throughout California, and today flour tortillas are favored over white bread for their versatility and low fat content.Hi, Im Jason Hill of Chef Tips outside the Mission Tortilla Factory in Anaheim.  Lets head back to the kitchen and learn how to make homemade tortillas.To prepare this flour tortilla recipe, you only need four ingredients: flour, baking powder, vegetable shortening or lard and salt. First, stir 4 cups all purpose flour and 1/8 teaspoon baking powder in a large bowl.  Next add 1/2 cup of shortening or lard into the mixture and work the fat into the flour with your hands.Dissolve 1 1/2 teaspoons of salt into 1 1/2 cups of warm water. Drizzle this slowly into the flour mixture and mix until you have a soft dough. Knead for 1 minute, adding flour or small amounts of lukewarm water if needed. The dough should not be too wet or dry. Once it is at the right consistency, turn bowl over to cover the dough and let it rest for about 20 minutes.Next, divide the dough into 12 pieces and form into balls. As you form and roll the balls, coat your hands with a little bit of shortening. Flatten and cover balls with plastic wrap and let rest for 20-30 minutes.To prepare the tortillas, preheat a griddle over medium heat. Remove a flattened ball and roll it into a circle. A small rolling pin works well. Turn the dough around after each stroke with the rolling pin. Roll as thin as possible, stretching with your fingers if necessary.Place each rolled tortilla on a hot cast iron skillet, pan or griddle and flip over every 15-20 seconds. Youll know its done when it develops brown spots on each side and it bubbles up.Serve these warm tortillas with butter right off the pan. Does anything smell better than an apple pie baking in the oven? Lauren Chattman from Pillsbury shows how to make the perfect apple pie. It's so good you don't even need the ice cream (but we'll understand if you have some anyway).Recipe: How to make apple pie1. Heat oven to 425 degrees. Roll one refrigerated pie crust into a 9 inch glass pie plate.2. Mix 6 cups of thinly sliced apples, preferably a firm variety like Granny Smith, 3/4 cup of sugar, 2 tablespoons of flour, a tablespoon of lemon juice,  3/4 teaspoon of cinnamon, 1/8 teaspoon of nutmeg, and 1/4 of a teaspoon of salt. Pour entire mixture into the pie shell.3. Take the second pie crust and roll it right on top of the apples. There should be a little bit of the pie crust hanging over the pie plate. Tuck the edges under for a thick crust.4. To finish the crust with a scalloped edge, place your index finger and thumb on a section of the outside edge of the pie crust. With your index finger on the other hand press into that section from the inside of the pie crust to make a scalloped edge all the way around.5. Cut four to six slits in the top of the pie for ventilation. This lets the moisture escape and ensures your apple pie has a crisper top crust.6. Place a pie shield, or aluminum foil strips, over the pie crust edges to prevent burning.7. Bake the apple pie for 40 to 45 minutes. About 15 minutes before the pie is finished, take the pie shield off to let the edge brown up.8. After baking, the apple pie should cool for two hours so the juices are reabsorbed into the apples. Ingredients:
1 whole chicken

1 diced onion

¾ tablespoon each of :

Salt, Black pepper, Allspice, Ginger, Turmeric, Cinnamon, Nutmeg. Optional, you may use Paprika, depends on how spicy you want it

4 cloves of garlic, diced or minced

1 tablespoon pickled lemons

¾ cup of cut fresh parsley and cilantro

2 large sliced carrots

½ cup green olives. I used the sliced pickled olives with salt and lemon juice, Palestinian style

½ cup olive oil

1 Diced tomato

1 Tablespoon butter

Directions:

• Wash your chicken, pat dry then rub with olive oil and lemon juice to get rid of any undesirable odors.

• In a big pot, add your butter, olive oil and onions. Let cook until translucent.

• Add garlic, cook for few minutes.

• Add the diced tomato. Cook for few minutes.

• Add the pickled lemon. Stir and cook for few minutes.

• Add your spices. Mix well and let cook. At this point your mix will smell wonderful.

• Add the parsley and cilantro. Stir and cook for few minutes.

• Add your chicken to the pot. Rub the cooked mix all over the chicken, inside and out.

• Add ¾ cup of water, enough to cook the chicken but not to have a lot of liquid at the end of the cooking process.

• Cover and let cook for 25-30 minutes, checking on the water level and how soft your chicken is.

• Half way through the cooking process, add your sliced carrots. Continue cooking.

• When the chicken is done, remove it from the pot into a baking pan and bake in 180 degrees Celsius and bake for 25 minutes, or until golden in color.

• Back to your sauce, add the olives and let simmer for 15-20 minutes to get all the flavors mixed up nicely.

• Plate your chicken; pour the sauce over it or to the side. Serve with lemon slices and steamed couscous or white rice. I would serve this dish with my mixed rice with nuts and dry fruits to get the full flavors of Algeria.
