This wonderful tomato soup recipe comes from the Bistro Jeanty restaurant in Yountville, California.  It's one of many fantastic restaurant recipes in Napa Valley.You will need 2 1/2 lbs ripe/juicy tomatoes, 1/2 cup butter, 1/2 pound of onion, 6 garlic cloves, 1/4 c of tomato paste, 1 bay leaf, 1/2 Tb. pepper corns, 1 tsp. thyme,  4 cups heavy cream, 1 tbsp butter. Salt to taste, 1/2 tsp white pepper, 1 lb. puff pastry, 1 egg.Procedure:Melt the ½ cup butter in a large stockpot over medium-low heat. For an inexpensive, yet elegant meal, cooking pork tenderloin is hard to beat.Chef Jason Hill shares a Pork Tenderloin recipe that's topped with a Zinfandel, Bing Cherry and Roasted Onion Warm Compote.This roast pork recipe uses just a few ingredients and is perfect for a dinner party or weeknight meal. It's one of the easiest pork recipes out there designed for the home cook.To prepare this pork loin recipe you'll need:2 1/2 pounds boneless pork tenderloin, removed of most fat2-4 tablespoons olive oilFresh sea salt and cracked pepper3 fresh onion slicesDrizzle a couple tablespoons of olive oil on both sides of the pork loin and rub into the meat. Season with sea salt and fresh cracked pepper on both sides.Preheat an oven-proof saute pan over medium heat. Add 1 tablespoon olive and add the tenderloin. Sear the meat about 3-5 minutes on each side.Next, place three sliced onion rings on pan, then set tenderloin back onto pan. Place pan into the oven at 375 F for about 30 minutes, or until the internal temperature reaches about 150 F. This will continue to carry over cook to about 160 F.To make compote, you'll need theCaramelized onions from the pan1 tablespoon honey1 teaspoon butter1/2 cup dried pitted bing cherries (or other dried fruit)1/4 cup red Zinfandel wine1/4 teaspoon saltFresh Cracked PepperPreheat saucepan on low. Add butter and melt down. Add the caramelized onions from the pork pan and stir around. Next add cherries or other dried fruit. Stir in the honey. Set on low and cover for 5 minutes. Next, stirring, add 1/4 cup Zinfandel and cover pot again for another 5-10 minutes. When the wine has cooked down, season the compote with salt and pepper to your taste.Cut your medallions about 1/2 inch thick. You can serve 2-4 slices per serving. Top the pork with the cherry sauce and served with fresh roasted potatoes and fresh green beans if desired.Thanks for watching!

I learned how to make this from my mom, and my mom used to make this for holidays or special days. The marinated beef, hot pepper, and egg combination gives you a very tasty and happy flavor. We usually use less spicy peppers for this recipe because you don't want peppers that are so hot that they cover the flavors in the other ingredients. If you can't eat spicy food then I recommend that you to use sweet peppers instead. So I used both peppers in this recipe. You can eat this dish just plain or as a side-dish.

Ingredients1 large floury potato, such as King Edward1-2 tbsp olive oil2-3 garlic cloves, peeled, roughly chopped100g/3½oz fresh baby spinach leaves, washed, chopped (or 200g/7oz frozen spinach, defrosted and drained)salt and freshly ground black pepper1 tbsp freshly squeezed lemon juice6 free-range eggs, beaten60g/2½oz mixed fresh herbs (such as parsley, coriander, dill and mint), washed, roughly chopped4 spring onions, trimmed, finely chopped4 cardamom pods, seeds only30g/1¼oz butterTo servefeta cheese, crumbled (optional)radishes (optional)plain yoghurt (optional)Method1. Boil the potato in a pan of salted water for 15-20 minutes, or until tender. Drain well, then mash with a potato masher or ricer until smooth.2. Preheat the oven to 180C/350F/Gas 4.3. Heat the oil in a frying pan over a medium heat. Add one of the chopped garlic cloves and fry for 1-2 minutes, or until softened. Add the chopped spinach and toss until wilted and warmed through. Season, to taste, with salt and freshly ground black pepper, then drizzle over the lemon juice.4. Beat the eggs in a large bowl, then add the cooked spinach mixture, chopped herbs and spring onions and stir until well combined.5. Whisk in the remaining chopped garlic, cardamom seeds and season again, to taste, with salt and freshly ground black pepper.6. Add the egg mixture to the mashed potato and stir until well combined.7. Heat the butter in a 25cm/10in ovenproof frying pan or casserole over a medium heat. When the butter has melted, swirl the pan until the butter has coated the insides.8. Add the egg and potato mixture, then transfer the pan or casserole to the oven and bake for 20-30 minutes, or until the middle of the tortilla has just set. (NB: The cooking time may vary depending of the depth of the casserole or pan.)9. Remove the tortilla from the oven and set aside for 10 minutes to cool slightly before serving. Serve in slices with feta cheese, radishes or yoghurt, if using.
