Ching's Chinese Food in Minutes/Spiced beef stir-fry topped with spring onion and corianderChing makes a speedy beef stir fry packed with cumin and chilli, topped with spring onion and coriander and served with a wasabi mayo.IngredientsFor the beef stir fry400g/14oz beef fillet2 tbsp groundnut oil1 tsp Shaoxing rice wine or dry sherry1 tbsp light soy saucepinch sea salt1 large handful fresh coriander, roughly chopped1 spring onion, finely slicedFor the wasabi mayonnaise1 tsp wasabi paste (available from some supermarkets and Asian grocers)3 tbsp mayonnaisepinch caster sugarFor the spicy coating1-2 tbsp ground cumin (to taste)1-2 tbsp dried chilli flakes (to taste)1 tsp ground black pepper½ tsp sea saltTo servewarm flour tortilla wrapsMethod1. For the beef, prepare the fillet by flattening it with a meat mallet or rolling pin, or cut it in half horizontally. Cut into wafer-thin slices.2. For the wasabi mayonnaise, mix all of the wasabi mayonnaise ingredients together in a small bowl. Set aside.3. For the spicy coating, mix all of the coating ingredients together on a plate. Roll the beef slices in the spice mix, then shake off any excess.4. Heat a wok until smoking and add the groundnut oil, then add the beef and stir-fry for one minute, or until browned. Add the rice wine and season with the soy sauce and a pinch of salt. Remove from the heat and stir in the coriander and spring onion.5. To serve, wrap the spicy beef in the tortillas and top with the wasabi mayonnaise. Serve immediately.

Ingredients1 large floury potato, such as King Edward1-2 tbsp olive oil2-3 garlic cloves, peeled, roughly chopped100g/3½oz fresh baby spinach leaves, washed, chopped (or 200g/7oz frozen spinach, defrosted and drained)salt and freshly ground black pepper1 tbsp freshly squeezed lemon juice6 free-range eggs, beaten60g/2½oz mixed fresh herbs (such as parsley, coriander, dill and mint), washed, roughly chopped4 spring onions, trimmed, finely chopped4 cardamom pods, seeds only30g/1¼oz butterTo servefeta cheese, crumbled (optional)radishes (optional)plain yoghurt (optional)Method1. Boil the potato in a pan of salted water for 15-20 minutes, or until tender. Drain well, then mash with a potato masher or ricer until smooth.2. Preheat the oven to 180C/350F/Gas 4.3. Heat the oil in a frying pan over a medium heat. Add one of the chopped garlic cloves and fry for 1-2 minutes, or until softened. Add the chopped spinach and toss until wilted and warmed through. Season, to taste, with salt and freshly ground black pepper, then drizzle over the lemon juice.4. Beat the eggs in a large bowl, then add the cooked spinach mixture, chopped herbs and spring onions and stir until well combined.5. Whisk in the remaining chopped garlic, cardamom seeds and season again, to taste, with salt and freshly ground black pepper.6. Add the egg mixture to the mashed potato and stir until well combined.7. Heat the butter in a 25cm/10in ovenproof frying pan or casserole over a medium heat. When the butter has melted, swirl the pan until the butter has coated the insides.8. Add the egg and potato mixture, then transfer the pan or casserole to the oven and bake for 20-30 minutes, or until the middle of the tortilla has just set. (NB: The cooking time may vary depending of the depth of the casserole or pan.)9. Remove the tortilla from the oven and set aside for 10 minutes to cool slightly before serving. Serve in slices with feta cheese, radishes or yoghurt, if using.

Chicken Tikka Masala
Ingredients:
5 green Cardamon pods
3 sticks of Cinnamon
4 tablespoons of olive or vegetable oil in large pan
3 chicken breasts
1 Large tomato
1 Teaspoon of tomato puree
150mls Water
Salt to taste
Yogurt or Coconut milk ( optional ) add at end to cool down or thicken

Into a bowl add these spices and mix

2 Teaspoons of ginger minced or 1 teaspoon of ground ginger powder
2 Teaspoons of garlic minced or crushed
1 Teaspoon of Cumin powder
1 Teaspoon of coriander powder
1/4 Teaspoon of Tumeric
1/2 - 1 Teaspoon of Cayenne pepper
1 Tablespoon of Paprika
1 Teaspoon of Garam Masala

Heat 4 tablespoons of olive or vegetable oil in large pan
Add 5 green Cardamon pods
3 sticks of cinnamon
Leave in oil for about 15 seconds to flavour oil and remove

Add 1 and 1/2 onions diced and cook for at least 5-8 mins
Add bowl of spices, stirring all the time.
Add tomato and tomato puree
and water
Bring to boil and cook for 2 mins and add salt to taste
Add slightly salted diced chicken (3 chicken breasts)
cook for 12-15 mins or until chicken is cooked
(check this by taking out a small piece,
cut down middle and ensure chicken white and not pink)
Add yogurt or coconut milk to thicken or cool down (yogurt has less fat)
Add Basmati rice
