How to Make Norma Pasta* (Pasta alla Norma)INGREDIENTS: (4 servings)400 gr (14.10 oz) Rigatoni Pasta200 gr (7.05 oz) Salted Ricotta Cheese2 Large, Firm Aubergines (Eggplants)12 Ripe Red Tomatoes4 Cloves of Garlic, peeled4 Tbsp Extra Virgin Olive OilA large bunch of Fresh BasilSaltFirst of all cut the aubergines into 1 cm thick slicesPlace them in a colander and sprinkle with salt, this step removes the bitter juice within the auberginesPlace a big pot with water on top to press them and set aside for about 1 hourNow make a cut on top of the tomatoes and blanch them in hot water for about 30 seconds, then transfer them to a large bowl of cold waterUsing a sharp knife peel the tomatoes cut them tomatoes into cubes and set asideAfter 1 hour remove the pot from the colander, place the aubergine slices on a layer of kitchen paper and pat them dryThen fry the aubergine slices in a large pot with oil to fryOnce the aubergines have a nice golden-brown color remove and place them on kitchen paper to drainHeat 4 tablespoons of olive oil in a non-stick frying pan, add the cloves of garlic and let it brown then add the basil hand crushedand the tomatoesSeason with salt and simmer over medium heat for about 10 minutesWhile the tomato sauce cooks, get the pasta into a pan of salted boiling water and cook according to the packet instructionsOnce the sauce is ready add the aubergine slices (leave aside some slices of aubergine for use as a garnish later) cook the sauce for a couple of minutes then remove the garlic cloves and when the pasta is cooked

Ingredients1 large floury potato, such as King Edward1-2 tbsp olive oil2-3 garlic cloves, peeled, roughly chopped100g/3½oz fresh baby spinach leaves, washed, chopped (or 200g/7oz frozen spinach, defrosted and drained)salt and freshly ground black pepper1 tbsp freshly squeezed lemon juice6 free-range eggs, beaten60g/2½oz mixed fresh herbs (such as parsley, coriander, dill and mint), washed, roughly chopped4 spring onions, trimmed, finely chopped4 cardamom pods, seeds only30g/1¼oz butterTo servefeta cheese, crumbled (optional)radishes (optional)plain yoghurt (optional)Method1. Boil the potato in a pan of salted water for 15-20 minutes, or until tender. Drain well, then mash with a potato masher or ricer until smooth.2. Preheat the oven to 180C/350F/Gas 4.3. Heat the oil in a frying pan over a medium heat. Add one of the chopped garlic cloves and fry for 1-2 minutes, or until softened. Add the chopped spinach and toss until wilted and warmed through. Season, to taste, with salt and freshly ground black pepper, then drizzle over the lemon juice.4. Beat the eggs in a large bowl, then add the cooked spinach mixture, chopped herbs and spring onions and stir until well combined.5. Whisk in the remaining chopped garlic, cardamom seeds and season again, to taste, with salt and freshly ground black pepper.6. Add the egg mixture to the mashed potato and stir until well combined.7. Heat the butter in a 25cm/10in ovenproof frying pan or casserole over a medium heat. When the butter has melted, swirl the pan until the butter has coated the insides.8. Add the egg and potato mixture, then transfer the pan or casserole to the oven and bake for 20-30 minutes, or until the middle of the tortilla has just set. (NB: The cooking time may vary depending of the depth of the casserole or pan.)9. Remove the tortilla from the oven and set aside for 10 minutes to cool slightly before serving. Serve in slices with feta cheese, radishes or yoghurt, if using.

Repeat so there are three pancakes in the pan.Sprinkle on about 1 tablespoon of chocolate chips on each pancake. Cook the pancakes until bubbles appear on the surface and start to pop. Flip the pancakes and cook until golden brown on the flip side.Repeat with remaining batter.Makes six 4-inch pancakesEnjoy!

Gordon Ramsay prepare these cherry samosasGordon Ramsay and his brigade of amateur chefs served cherry compote samosas with clotted cream to diners in the F Word restaurantServes 4Ingredients    * 4 tbsp caster sugar, plus extra for dusting    * 500g mixed fresh cherries, pitted and halved    * Pared zest of 1 lemon    * Splash of Kirsch    * Squeeze of lemon juice    * Handful of mint, chopped    * 200g filo pastry sheets, measuring about 28 x 40 cm    * 150-200ml clarified butter    * 150ml mascarpone or clotted cream    * Clotted cream, to serveMethod:How to make cherry compote samosas with clotted cream1. For the cherries, add the sugar to a non-stick pan and place over a moderate heat. Once the sugar begins to dissolve add the cherries with the lemon zest and cook until the cherries start to release their juices. Add a splash of Kirsch and cook for a few more minutes until the liquid has reduced and thickened. Add a squeeze of lemon juice, stir through the mint, then tip onto a plate to cool2. For the samosas, brush a sheet of filo pastry with melted butter then lay a second sheet on top. Repeat with a third sheet of pastry and brush with butter once again. Cut into long strips, 10-15cm wide3. Place ½-1 tablespoon of the cherry mixture onto the end of one of the filo strips, about 1cm in from the corner edge closest you. Spoon 1 teaspoon of mascarpone on top. Fold the corner over to encase the filling, creating a triangle shape. Fold the pastry over again, maintaining a triangle shape, until you reach the other end. Brush the seam with more butter to seal and press gently. Repeat with the remaining pastry and filling to make 12 samosas. (Reserve the leftover cherry mixture for serving)4. Melt the remaining butter in a non-stick frying pan. Shallow-fry the samosas in the butter for 1-1½ minutes on each side until the pastry turns golden and crisp. Roll the samosas in caster sugar to coat and serve straight away5. To serve, place 3 samosas on a plate, spoon some of the remaining cherry mixture off centre and finish with a quenelle of clotted cream
