Tuna SaladIngredients:1 potato - peeled.One big carrot - peeled.1 boiled egg. (Hard egg)1 can of tuna in oil- Drained1/2 can (one cup) of green peas - Drained and rinsed4 tablespoons of light mayonnaise15 black olives peeled and cut to small pieces.1 tsp of vinegar2 tsp of lemon juiceSalt & pepper to tasteHow to prepare:Peel the carrot and cut into small cubes.Boil the carrot in water with one tsp of vinegar and one tsp of saltPeel the potato and cut into small cubes.After 10 min, add the potato into the boiling water.Cook until it's soft.Chill and put in a serving bowl.Cut the boiled egg into small cubes and add into the bowl.Drain the Tuna, and add into the bowl.Add the peas and the olives.Add the mayonnaise, lemon juice, salt & pepper to taste.Mix well, and chill for one hour before serving.

Tortillas are one of the staples of Mexican cuisine, served up fried as tacos, rolled into soft burritos or layered as enchiladas.The history of tortillas dates back to 10,000 BC. Later, it was popularized when a peasant prepared this flat corn bread to the Mayan king.Missionaries later spread the recipe for tortillas throughout California, and today flour tortillas are favored over white bread for their versatility and low fat content.Hi, Im Jason Hill of Chef Tips outside the Mission Tortilla Factory in Anaheim.  Lets head back to the kitchen and learn how to make homemade tortillas.To prepare this flour tortilla recipe, you only need four ingredients: flour, baking powder, vegetable shortening or lard and salt. First, stir 4 cups all purpose flour and 1/8 teaspoon baking powder in a large bowl.  Next add 1/2 cup of shortening or lard into the mixture and work the fat into the flour with your hands.Dissolve 1 1/2 teaspoons of salt into 1 1/2 cups of warm water. Drizzle this slowly into the flour mixture and mix until you have a soft dough. Knead for 1 minute, adding flour or small amounts of lukewarm water if needed. The dough should not be too wet or dry. Once it is at the right consistency, turn bowl over to cover the dough and let it rest for about 20 minutes.Next, divide the dough into 12 pieces and form into balls. As you form and roll the balls, coat your hands with a little bit of shortening. Flatten and cover balls with plastic wrap and let rest for 20-30 minutes.To prepare the tortillas, preheat a griddle over medium heat. Remove a flattened ball and roll it into a circle. A small rolling pin works well. Turn the dough around after each stroke with the rolling pin. Roll as thin as possible, stretching with your fingers if necessary.Place each rolled tortilla on a hot cast iron skillet, pan or griddle and flip over every 15-20 seconds. Youll know its done when it develops brown spots on each side and it bubbles up.Serve these warm tortillas with butter right off the pan. Spicey chilli sweet and sour meat balls<br /><br />

500grms or 1 lb pork mince<br /><br />
1 small onion, chopped finely or grated<br /><br />
2 small onions chopped<br /><br />
3 cloves garlic (crushed)<br /><br />
1 red pepper, de-seeded and diced<br /><br />
1 green pepper, de-seeded and diced<br /><br />
1 tin tomatoes<br /><br />
1 450 grm can pinneapple chunks in juice<br /><br />
1 tablespoon soy sauce<br /><br />
1 tablespoon tomato puree<br /><br />
1 teaspoon cornflour<br /><br />
2 or 3 very finely chopped chillies<br /><br />

Place the mince in a mixing bowl, add the finely or grated onion and garlic and chillies. Use clean hands, mix well and shape the mixture into about 15 meatballs.<br /><br />
In a non steak pan quickly fry the meat balls to seal them, then remove and set to one side.<br /><br />

Add the peppers  and the chopped onions .to the pan and stir fry for a further 5 mins.<br /><br />
Add the plum tomatoes<br /><br />
Stir in the can of pineapple chunks,soy sauce,tomato puree and bring to the boil.<br /><br />
Return the meat balls to the pan, reduce the heat, cover and simmer for around 15 minutes.<br /><br />
If you prefer larger meat balls, allow more time to simmer.<br /><br />
Mix the cornflour with a little water to make a thin paste, mix this into the pan, stirring all the time until the sauce thickens.<br /><br />
Seve with the Penne Pasta. <br /><br />

Squirrels are plentiful in Missouri, and the hunting season is long, so there's lots of opportunity to enjoy something that's both delicious and versatile...like my squirrel country sausage! Remove all the squirrel meat from the bones and grind or chop using a food processor.  The leg meat is full of tendons and doesn=t always grind easily, but will be fine-chopped with a food processor.  Mix this meat with fresh pork sausage. Mince onion and garlic.  Cook the onion until it's transparent, then add the garlic and saute slightly.  Mix together the meats, onion and garlic and herbs.  To test to make sure the seasoning is the way you like it, form one small patty & cook it.  Taste test the sausage and adjust your seasonings to your preferences. Package and freeze the meat in meal-size servings.  When you thaw it, form it into small patties to cook or grill or use with your favorite sausage recipes. The best thing about squirrel country sausage is that it can be used for any meal.  It's great on pizza...or you can scramble it into your breakfast eggs or serve it with pancakes!

For the beef, prepare the fillet by flattening it with a meat mallet or rolling pin, or cut it in half horizontally. Cut into wafer-thin slices.2. For the wasabi mayonnaise, mix all of the wasabi mayonnaise ingredients together in a small bowl. Set aside.3. For the spicy coating, mix all of the coating ingredients together on a plate.
