A kebab is notoriously naughty - packed full of creamy sauces, fatty meat and normally served with chips. Not this one. It's made from lean chicken in a light marinade and it's served with a Lebanese twist by adding mixed pickles and garlic sauce for a superb flavour.Serves 2Ready in 20 minutesIngredientsThe marinade    * 2 cloves of garlic, peeled and chopped    * A pinch of smoked paprika    * 1 tablespoon olive oil    * Salt and white pepper    * 2 free-range chicken breasts, cut into 2cm stripsThe garlic sauce    * 150g 0% fat Greek yoghurt    * 1 clove of garlic, peeled and grated    * 1 tablespoon chopped flat-leaf parsley    * A squeeze of lemon juice    * SaltMethod: How to cook Lebanese chicken kebabs with garlic sauce and pickles1. To make the marinade, stir together the garlic, oil, paprika and seasoning.2. Add the chicken and mix thoroughly. Cover and refrigerate for at least 12 hours.3. To make the garlic sauce, mix together the yoghurt, garlic, parsley, lemon juice and a pinch of salt. This can be made up to a day in advance if it's easier for you.4. Heat a griddle pan until smoking. Thread the pieces of chicken on to two wooden skewers (if you soak the skewers before using them, they will not burn).5. Lay the kebabs on to the griddle and cook for five minutes on each side or until cooked through. Lay the wraps on two plates and spread over the garlic sauce.6. Lay two lettuce leaves on each, one of the tomatoes, three of each of the pickles and finally top with a kebab and a dash of Tabasco.7. Fold the base up towards the middle, and the sides in. Serve immediately.

The eggplants are grilled until they are covered with black ash crust. The crust is cleaned off and the remaining cooked eggplant is mashed with a blunt, thick wooden knife on a wooden platter (using a metal knife will turn the eggplant flesh black). The eggplant mash is mixed in a bowl, stirring continuously, with sunflower oil, chopped onions and salt. The mix is beaten vigorously. Crushed garlic and ground pepper may be added too. I wanted to share an Oktoberfest recipe with you, and a sauerkraut recipe was the first thing that came to mind. Today we are making saurkraut with bratwurst. I figured a trip to an Oktoberfest party would be a good place to get us a recipe. After sampling a few good easy recipes, I picked up some ingredients, took in some sights and headed home.Sauerkraut with Brats32 ounces sauerkraut, rinsed and patted dry1/2 cup applesauce1 teaspoon caraway seeds1 cup diced onion3-4 strips diced bacon1 clove garlic, minced2 bay leaves1 tablespoon juniper berries, crushed1 cup Riesling wineHeat slow cooker or Crock Pot on high. Place the sauerkraut, applesauce, caraway seeds, and bay leaf into the cooker.Saute bacon in a pre heated pan for one minute.  Add diced onion and cook for two more minutes.  Then add the garlic and crushed juniper berries and cook for two more minutes.Add the Riesling wine and let that cook down for a minute or two.  While the wine is cooking, scrape the bottom of your pan with a wooden spoon.Pour this mixture into your cooker and cook on high for at least one and a half hours.This will make enough sauerkraut to cover 6 to 8 bratwurst sandwiches.
